Peanut Butter Cookies

Ingredients:

  • 1/2 cup shortening
  • 3/4 cup creamy peanut butter
  • 1 1/4 cups firmly packed light brown sugar
  • 3 TBL milk
  • 1 tsp vanilla
  • 1 egg
  • 1 3/4 cups flour
  • 3/4 tsp salt
  • 3/4 tsp baking soda

Heat oven to 375 degrees.

Combine shortening, peanut butter, brown sugar, milk and vanilla in large bowl. Beat at medium speed until well blended. Add egg and beat just until blended.

Combine flour, salt and baking soda. Add to creamed mixture and beat at low speed. Mix just until blended.

Roll into balls and place 2” apart on baking sheet. Flatten slightly with fork.

Bake at 375 degrees, 7-8 minutes.

Super Duper Chocolate Cookies

Ingredients:

  • 1/2 cup shortening
  • 4 oz unsweetened chocolate
  • 2 cups sugar
  • 2 tsp vanilla
  • 4 unbeaten eggs
  • 2 cups flour
  • 2 tsp baking powder
  • 1/8 teaspoon salt
  • Powdered sugar

Melt shortening and chocolate. Add sugar and vanilla and mix well. Add eggs, one at a time, beating after each one.

Sift flour, baking powder and salt together. Add chocolate mixture and mix well.

Chill several hours. Form into small balls and roll in powdered sugar.

Bake at 350 degrees, 12 – 15 minutes.

Oatmeal Cranberry Cookies

SECRET FAMILY RECIPE (Shhh!)

Ingredients:

  • 1 cup butter, room temperature
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 3 cups old fashioned oats
  • 1 cup fresh cranberries, quartered
  • 1 cup white chocolate chips or chopped white chocolate
  1. Preheat oven to 350F.
  2. In a large mixing bowl, cream the butter and sugars together until creamy. Mix in eggs one at a time, then mix in the vanilla.
  3. In a separate bowl, whisk together the flour, baking soda, cinnamon and salt.
  4. Add flour mixture to the butter/sugar mixture and stir until well combined.
  5. Stir in oats, cranberries and white chocolate chips.
  6. Drop about a tablespoon of dough onto ungreased cookie sheet for each cookie leaving 2 inches of space between each.
  7. Bake for approximately 10-12 minutes or until cookies start to brown around the edges. Cool on a cooling rack.

Chocolate Chip Cookies

CJ’S FAMILY RECIPE

Mix together in a large bowl:

3/4 cup Butter
1 cup Brown Sugar
1/2 cup White Sugar
1 tsp Vanilla
Beat in 2 Eggs

Stir in:

2 cups Flour
1 tsp Salt
1 tsp Baking Soda

Add and mix in:

12 oz. (2 cups) Chocolate Chips

Drop spoonfuls of dough on a greased baking sheet then bake at 350° for 10 minutes in a preheated oven.

Remove tray from oven and let sit for 2-3 minutes to finish baking. Place cookies on wire rack to cool.

This will result in approximately 3-4 dozen cookies.

Cut-Out Cookies

TY’S FAMILY RECIPE

2 sticks margarine
2 cups sugar
1 cup sour cream
2 eggs
1 tsp vanilla
2 tsp baking soda
5 – 6 cups flour

Roll thick and cut out
Bake @ 350 degrees
6 – 8 minutes

Frosting:

1 stick real butter
(1) 8 oz cream cheese
1 tsp vanilla
(1) 1 lb. bag powdered sugar

Mix well

Molasses Cookies

KIM’S FAMILY RECIPE

1 ½ cup vegetable oil
or melted shortening
2 cups sugar
1 teaspoon salt
½ cup molasses
2 eggs
4 teaspoons baking soda
4 cups flour
1 teaspoon ground cloves
1 teaspoon ginger
2 teaspoons cinnamon

Mix all ingredients and chill
thoroughly.

Shape into 1” balls.

Roll in white sugar & bake at 375 degrees for 10 minutes.
